SUMMARY:The Co-Fermentation Vintner's Table
DESCRIPTION:Jessica will be out on our patio from 12 until 1:30 PM to talk about all the nerdy notes on co-fermentation. If you have ever had a question about how this method differs from blending\, or if you love any of our Sauvage wines\, then this is the Vintner's Table for you! She will be opening some of the award winning co-fermentations that aren't currently on the menu. Dating back to the earliest periods\, this mixing of grapes was often called "Field Blends\," and many still use that terminology to this day. In the current shift from industrial winemaking back towards artisan small-batch wines\, this technique often develops completely unique wines that are almost impossible to replicate. This lends more credence to wine as a work of art. Come and learn more about the history of this technique and why Jessica loves to use it.
